OKRA FRITTERS 
24 sm. pods of okra
1 tsp. baking powder
1 tsp. salt
2 tbsp. flour
1 egg

Cut okra into small pieces. Place in mixing bowl and mash until fluffy (with hands). Add egg; beat well. Add flour, baking powder and salt. Beat until light and fluffy. Drop by tablespoon into hot oil and fry until brown and crisp. Drain on paper towel. Serve immediately.
