EGGPLANT PARMESAN 
1 lg. eggplant
Parmesan cheese
Salt and pepper to taste
1 can tomatoes
1 can tomato paste
1 tsp. oregano
Mozzarella cheese
2 cloves garlic, chopped
1 egg
Cooking oil

Slice eggplant. Beat egg in a bowl with salt, pepper, and Parmesan cheese to taste. Dip slices of eggplant into egg mixture. Fry until brown and layer in baking dish. Sprinkle with salt, pepper, and Parmesan. Place Mozzarella on each layer along with sauce made by frying garlic in oil and adding tomatoes, tomato paste, salt, pepper, and oregano until thoroughly mixed. After layering, bake in 350 degree oven for 40 minutes until cheese melts. Serve hot. This dish is also good cold.
