BROCCOLI AND CHEESE CUSTARD 
1 bunch fresh broccoli or cauliflower or 1 pkg. frozen
3 eggs
2/3 c. milk
1 1/4 c. grated Cheddar cheese
Salt and pepper

Cook broccoli until tender. Trim 1 cup bottoms off broccoli. Drain and place in the bottom of a shallow buttered casserole. Beat the eggs, add the milk, cheese, and seasonings. Beat until thoroughly mixed. Pour over the broccoli. Put in an oven heated to 325 degrees for about 25 to 30 minutes; or until the top is brown. A knife inserted in the custard comes out clean. This is good hot or cold and can be reheated in a moderate oven. Serves 4.
