CHEESY MEAT LOAF 
1 1/2 lb. hamburger
1 egg
3/4 c. cracker crumbs
2 tbsp. minced onion
1/4 tsp. oregano
1/2 tsp. pepper
1 (8 oz.) can tomato sauce
2 c. shredded mozzarella or Cheddar cheese
1/4 tsp. Italian seasoning
Salt to taste

Combine beef, egg, crumbs, onion, salt, oregano, pepper and 1/3 can tomato sauce. Mix well. Shape into flat rectangle 8 x 12 inch on wax paper, 1/4 inch thick. Sprinkle cheese evenly over meat; roll up like jelly roll. Press ends and seal. Place in 9 x 12 inch dish. Pour remaining sauce mixed with Italian seasonings over top.

If microwaving: Cover with wax paper and microwave on high for 12-15 minutes. Let stand 10 minutes or bake at 350 degrees for approximately 1 hour.

Since microwave ovens vary in power, you may need to adjust your cooking time.
