THE EASIEST POTATO-LEEK SOUP 
Simple soup and so easy to make!

4 medium red potatoes
1 leek
2 vegetable bouillon cubes (I use low sodium)
4 cups water
salt and pepper, to taste

Set water to boil. Rinse potatoes and leek. Cube potatoes and chop leek for faster cooking.

Dissolve bouillon cubes into the boiling water, add potatoes and leek. Bring to a boil, then reduce the heat to medium-high. Let cook until potatoes are fork soft. Turn off the heat and let cool for a while.

Be careful when pouring the ingredients into the blender (or use a ladle). Puree quickly.
