HAM GOUGERE 
Choux pastry
1/4 tsp. dry mustard
Dash of red pepper
2 1/4 oz. can deviled ham
3/4 c. caraway Swiss cheese, cut into 1/4 inch cubes
3 tbsp. grated Parmesan cheese

Lightly grease and flour a 14 inch pizza pan. Using a bowl as a guide, mark an 8 inch circle in the flour with your finger. Prepare dough for pastry. Stir in dry mustard, red pepper and deviled ham until mixed well. Stir in Swiss cheese. Making a ring about 2 inches wide, spoon the dough in circle just inside the marked circle. Sprinkle with Parmesan cheese.

Refrigerate up to 5 hours, if desired. Bake Gougere in 400 degree oven for 35 to 40 minutes until puffed and golden brown. Gougere will sink slightly as it cools. Cut in 3 pieces and serve warm. Makes the equivalent of 10 rolls or 12 appetizer servings.
