BARBECUED BRISKET 
1 boneless beef brisket (3-5 lb.)
Salt & pepper to taste
Seasoned salt
Celery salt
1 (3.5 oz.) bottle liquid smoke
Bottled barbecue sauce or sauce recipe below

Place brisket on large sheet of heavy-duty aluminum foil. Season with salts and pepper. Sprinkle 2/3 of liquid smoke over both sides. Seal foil well and place brisket in 9 x 13 inch pan. Refrigerate overnight. Bake at 250 degrees for 5-6 hours or until tender. Open carefully; spoon off fat. Cool slightly and slice thinly across grain. Place back in foil and spoon barbecue sauce over meat. Bake another 30 minutes to 1 hour.

BARBECUE SAUCE:

1 tsp. salt
1 tbsp. paprika
1 med. onion, grated
1/2 c. water
1/3 c. lemon juice
1/2 clove garlic or 1/2 tsp. garlic salt
1/4 c. butter
1/2 tsp. pepper
3 tbsp. brown sugar
1 c. ketchup
1 tsp. Worcestershire sauce
