BANANA - PINEAPPLE CAKE 
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs, beaten
1 1/2 c. oil
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple with juice
2 c. mashed banana (about 3 med.)
1 c. nuts, chopped (optional)

Stir first five ingredients into large bowl. Beat together eggs, oil, vanilla, pineapple and banana. Add to flour mixture and mix well by hand. Stir in walnuts. Pour into greased and floured 10-inch tube or Bundt pan and bake 1 hour and 15 minutes at 350 degrees or until it tests done. Cool on rack 15 minutes before removing from pan and cooling completely on a wire rack. Sprinkle with powdered sugar.
