ZUCCHINI OATMEAL COOKIE 
1 1/2 c. sugar
1 c. butter
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
2 eggs
1 tsp. vanilla
3 c. flour
1 c. raisins
2 c. grated unpeeled zucchini
1 c. nuts, optional
3 1/2 c. oatmeal

Cream together sugar, butter, eggs, salt, and vanilla; mix together flour, baking soda, cinnamon, oatmeal. Add to creamed mixture and mix well. Add raisins and nuts. Drop by teaspoon on greased cookie sheet. Bake in 350 degree oven for 10-12 minutes. Makes about 70 cookies.
