RICE PILAF | |
1 c. minced onion 1/2 c. butter (1 stick) 2 c. long grain rice 3 c. chicken broth 1/2 c. golden raisins, yellow In a 2 quart casserole cook onion in butter stirring for 8 minutes or until soft. Add rice and stir to coat the grains with the butter. Add chicken broth and raisins, bring liquid to a boil, stirring. Remove from heat, cover and bake in a 325 degree oven 30 minutes. Add salt and white pepper to taste and fluff the rice with a fork. |
