MOM'S SIMPLE HOMEMADE CHICKEN
NOODLE SOUP
 
Use any pot big enough to hold the amount you are making.

2 tbsp. olive oil
2 cups diced carrots
2 cups diced onion
2 cups diced celery
1 lb diced chicken
1 qt chicken stock
1 qt water
8 oz egg noodles
salt
pepper

Sauté oil carrots onion celery until onion is transparent. Add chicken and sauté. Add stock and water, simmer until carrots are tender. Salt and pepper to taste (stock might contain enough salt). Add noodles and cook as directed on package.

Add or exclude anything you want and make it you own (frozen peas or beans, corn, peppers, herbs, spice). Use any part of the chicken. *amounts are approximate.

Make enough for at least 2 meals.

Serve with salad, garlic bread, french bread, biscuits, corn bread or a sandwich it's your choice. It's great for a family on a cold winter day.
