ZUCCHINI COOKIES 
1 c. oil
2 c. brown sugar
2 tsp. vanilla
2 c. grated, unpeeled zucchini
2 c. all-purpose flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 c. whole wheat flour
2 tsp. baking powder
1 tsp. nutmeg
1/2 tsp. ginger
2 c. raisins
1 c. chopped nuts

Beat together oil, brown sugar and vanilla; stir in zucchini. Sift together dry ingredients; combine with creamed mixture. Add raisins and nuts. Bake at 350 degrees for 8 to 12 minutes.
