SHRIMP TOAST 
3/4 lb. raw shrimp, chopped (not too finely)
4 water chestnuts, chopped
1 tsp. salt
1/2 tsp. sugar
1 tbsp. cornstarch
1 egg, lightly beaten
2 tbsp. chopped scallions
6 slices stale white bread
2 c. vegetable oil
Duck sauce

Mix first 7 ingredients together gently. Trim crusts from bread and spread with mixture. Heat oil. Gently lower bread into hot oil, shrimp side down. Fry 1 minute, then turn for 30-40 seconds until lightly golden. Dry on paper towels for 15 minutes.

Refrigerate. Slice into quarters (can be frozen now.) Bake for 5-6 minutes at 350 degrees. Serve with duck sauce. Delicious!
