STRAWBERRY PIE 
1 qt. fresh strawberries
1 c. sugar, scant
2 1/2 tbsp. cornstarch
1 1/2 tsp. lemon juice
Water
Red food coloring
1 baked pie shell

Clean berries and cut in half. Add sugar and let stand 30 to 45 minutes at room temperature. Strain juice; place in measuring cup; add water to make 1 1/2 cups. Add lemon juice. Dilute cornstarch with a little juice and cook, stirring, over low heat until it thickens. Cook 2 minutes. Add 3 drops red food coloring. Remove from heat. Add berries. Cool thoroughly. Fill baked pie shell. Chill. Serve with whipped topping.
