ITALIAN ZUCCHINI SQUASH PIE | |
1 (8 oz.) crescent rolls 4 c. zucchini, sliced thinly 1 c. onion, chopped 2 eggs 1 1/2 c. Mozzarella cheese, shredded 1/4 c. butter 2 tbsp. dry parsley 1/4 tsp. oregano 1/4 tsp. basil 1/4 tsp. garlic Dash of salt and pepper Saute zucchini and onions in butter. Add seasonings. Press crescent rolls into a round pizza pan or a rectangle pan. Press up the side of the pan to form a one inch lip. Shred Mozzarella cheese and add eggs and mix well. Drain any liquid off the zucchini and onions mixture and add to the cheese and eggs. Mix well and pour into pan lined with the crescent rolls. Bake at 375 degrees for approximately 30 minutes. NOTE: I bake it the first 20 minutes on center rack and last 10 minutes on the bottom rack. This makes for a nice crispy crust. |
