NEW YORK STATE BAKED BEANS | |
8 oz. dried baby lima beans 4 c. water (to soak beans overnight) 1 sm. piece of salt pork 1 onion Salt, pepper and dry mustard to taste In a beanpot or casserole, place onion, then beans. Sprinkle with seasonings, and gently pour over the liquid in which the beans soaked in to cover. Place salt pork on top. Cover and bake 2 hours in oven at 275-300 degrees, during which you can smell the beans. Add liquid if necessary. Uncover for the last 12 hour or so the beans can brown. Note: This can be eaten hot or cold, in a sandwich, or with chili sauce. It can also be a terrific base for a bean soup. |
