DOUBLE CHOCOLATE MINT TREASURES 
1 (6 oz.) pkg. semi-sweet chocolate chips (1 c.)
1 (6 oz.) pkg. semi-sweet mint chocolate chips (1 c.)
2 eggs
1/2 c. butter
3/4 c. sugar
1 tsp. vanilla
2 c. Quaker oats, quick or old fashioned, uncooked
1 1/2 c. all purpose flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. powdered sugar

Heat oven to 350 degrees. In heavy saucepan over low heat, melt 1 cup chocolate mint chips. Stir until smooth; cool slightly. Beat together butter and sugar until light and fluffy. Blend in eggs, vanilla and melted chocolate. Add combined dry ingredients except powdered sugar, stir in remaining chocolate pieces. Shape dough into 1 inch balls; roll in powdered sugar, coating heavily. Place on ungreased cookie sheet and flatten with glass. Bake 10-12 minutes. Cool 1 minute on cookie sheet; remove. Store in airtight container. Makes 5 dozen.

To melt chocolate in microwave, place chips in glass container and microwave on high for 1-2 minutes. Stir after 1 minute and every 30 seconds after, until chocolate is melted and smooth.

Since microwave ovens vary in power, you may need to adjust your cooking time.
