LENTILS, RICE AND VEGETABLES 
2 tsp. oil
2 c. thin sliced onion
1 c. red and yellow pepper
1 clove minced garlic
2 c. water
3 oz. lentils, uncooked, rinsed
2 oz. brown rice
1 packet chicken broth and seasoning
2 tbsp. sour cream
2 tsp. flat leaf parsley

Heat oil, brown onion, pepper, and garlic, 8-10 minutes. Remove 1 cup of vegetables and set aside. Add water, lentils, rice and broth mix. Boil and cover. Simmer 40 minutes. On serving platter, top with vegetables and sour cream and parsley. Makes 2 servings.
