GRAPEFRUIT CAKE | |
1 1/2 c. sugar 1 tbsp. grated grapefruit rind 3/4 c. butter 3 eggs 3 c. flour 3/4 tsp. salt 3 1/2 tbsp. baking powder 1/4 tsp. baking soda 1 c. grapefruit juice Cream sugar, rind and butter. Add eggs one at a time and beat well. Sift dry ingredients together and add to creamed mixture alternately with grapefruit juice, beginning and ending with dry ingredients. Pour into 2 greased and floured 9 inch cake pans. Bake at 350 degrees F. for 30 minutes. Cool on rack and spread on frosting. FLUFFY FROSTING: 8 oz. pkg. cream cheese 1 tbsp. butter 1 tsp. grated grapefruit rind 1/2 tsp. vanilla extract 6 - 6 1/2 c. sifted powdered sugar Grapefruit juice Blend ingredients with enough grapefruit juice for spreading consistency. |
