BAKED MULLET WITH SOUR CREAM 
6-8 boneless fillets of mullet
Salt & pepper
1 lemon
Ritz crackers, crumbled fine
1 (16 oz.) sour cream
Butter, 1 stick

Lay boneless fillets on a jelly roll pan. Season with salt and pepper. Cut lemon and squeeze on top of fish, pick off seeds. Spread on sour cream then cover completely with cracker crumbs. Dab top of crumbs with butter. Bake at 325 degrees for 20 to 30 minutes or until fish is done.
