FLOUNDER BAKED IN SOUR CREAM 
4 tbsp. butter
2 lb. flounder fillets
1 tsp. salt
1/2 tsp. hot pepper sauce
1 tbsp. paprika
1/4 c. grated Parmesan cheese
1 c. sour cream
1/4 c. bread crumbs

Preheat oven to 350 degrees. Grease 2 quart baking dish with 1 tablespoon butter. Arrange fish fillets in baking dish. Blend salt, pepper sauce, paprika and Parmesan cheese into sour cream.

Spread over fish. Top with bread crumbs and dot with remaining 3 tablespoons butter. Baked uncovered for 30 minutes or until fish is easily flaked with fork. Serves 4 to 6.
