BAKED PERCH 
3 lbs. fresh or frozen (thawed) Nile perch
3 oz. sour cream
1/2 c. crushed cracker crumbs
Slivered almonds
Butter

Place fish one layer deep in a baking dish. Put a pat of butter in center of each piece of fish. Spoon a layer of sour cream over all fish and cover with cracker crumbs. Sprinkle with slivered almonds. Bake at 350 degrees for 15 to 20 minutes, testing for flakiness when done. Serves 4.
