CHERRY - VANILLA FUDGE 
2 c. granulated sugar
1/2 c. dairy sour cream
1/3 c. light corn syrup
2 tbsp. butter
1/4 tsp. salt
2 tsp. vanilla
1/2 c. candied cherries, chopped
1 c. chopped walnuts

In a 2 quart glass measuring cup with handle, combine sugar, sour cream, corn syrup, butter, and salt. Microwave at high 5 minutes. Stir well until sugar dissolves. Microwave at 6 minutes or just until mixture reaches 236 degrees. Let stand 15 minutes. Do not stir. Add vanilla; beat until mixture starts to lose it's gloss, about 6 minutes. Stir in cherries and walnuts. Quickly pour into an 8 1/2 x 4 1/2 inch loaf pan. Cool and cut into squares.

Since microwave ovens vary in power, you may need to adjust your cooking time.
