TOFU LASAGNA | |
1/3 c. fat-free cottage cheese 1 oz. grated part-skim mozzarella cheese 3 oz. sliced firm tofu (about 1/4 inch thick) 2 tsp. parmesan cheese Tomato sauce Vegetables: green pepper, onion, mushrooms, zucchini Lasagna noodles Make your favorite tomato sauce. (I just use Furmanos crushed tomatoes and Italian stewed tomatoes, no salt added; along with spices and cook it for about 2 hours on low). Cook lasagna noodles. Layer a 9 x 9 inch glass dish with sauce, noodles, tofu, cottage cheese, mozzarella, noodles, sauce, vegetables. Top with noodles, sauce and mozzarella and parmesan. Bake for 45 minutes to 1 hour at 350 degrees (makes 2 servings). Use more of cheeses and tofu to make larger quantity just as in making regular lasagna. This is good and a very healthy version for the diet conscious. Very low fat. |
