JESSE'S MEXICAN MEATLOAF | |
1 egg 1 lb. ground beef 1/2 c. dry bread crumbs (crackers may be used) 1/2 tsp. oregano leaves 1 sm. onion, chopped 1/2 c. chili sauce or ketchup 7 oz. can Mexican corn with sweet peppers, drained Heat oven to 350 degrees. In large bowl beat egg slightly. Add remaining ingredients; mix well. Press meat into pan and bake 45 minutes. TOPPING: 1 egg, slightly beaten 1 c. shredded cheddar cheese 1/2 tsp. salt 1/2 tsp. dry mustard 2 tsp. milk 1/2 tsp. Worcestershire sauce 4 slices bacon, drained & crumbled 4 green olives In bowl combine egg, cheese, salt, mustard, milk and Worcestershire sauce. Spread on meat loaf. Top with cooked bacon and olives. Return to oven and bake 3 to 5 minutes or until cheese melts. Let stand 10 minutes before removing from pan. |
