ZUCCHINI PIE 
8 eggs
1/2 c. vegetable oil
1/2 c. grated Italian cheese
1/2 tsp. salt
1/4 tsp. pepper
1 med. onion (chopped)
2 c. Bisquick
6 c. zucchini (cubed)

Lightly grease baking dish. Preheat oven 350 degrees.

In a large bowl slightly beat eggs. Mix in oil and stir. Add cheese, salt and pepper. Stir in onion. With a fork mix in Bisquick until just combined. Fold in zucchini cubes. Pour into prepared 12 or 13 inch quiche or pyrex dish. Bake 45 minutes until top is golden brown.
