OVEN-FRIED PARMESAN POTATOES 
6 lg. baking potatoes (about 2 1/2 lbs.)
8 tbsp. unsalted butter (1 stick)
Salt to taste
1 c. very finely grated Parmesan cheese
1 tsp. coarsely ground pepper

Can be done quickly in a food processor.

Preheat oven to 400 degrees. Peel the potatoes and cut them lengthwise into 1/2 inch wide wedges. Melt the butter in a heavy ovenproof skillet preferably cast iron and add potatoes and toss until they are coated with butter. Salt the potatoes generously. Place the skillet in oven and bake 20 minutes, stirring several times. Remove the skillet from oven but leave the oven on. Mix the Parmesan cheese and pepper together in a bowl. Sprinkle this mixture over the potatoes and toss well. Return the skillet to the oven and bake until potatoes are crisp and golden, 15 to 20 minutes. Watch the potatoes carefully during the second baking to make certain they do not burn. Serves 6.
