INDIANA CONEY ISLAND SAUCE | |
3 lb. ground beef (I use Angus) SAUCE: 1 (15 oz.) can chicken broth (Swanson) 1 tbsp. liquid smoke 3 tbsp. chili powder 2 tbsp. ground cumin 3 tbsp. paprika 3 tbsp. garlic powder 3 tbsp. onion powder 1 tbsp. cayenne powder 1 tsp. oregano 2 tsp. sugar Brown beef just until pink is gone, make sure to break up meat as much as possible. Just before beef is done add liquid smoke. Add 2 cups chicken stock to same pan -- DO NOT DRAIN GREASE. Mix all dry ingredients together in a bowl. Just before beef is done before adding stock add liquid smoke. Once the stock starts to boil reduce to simmer then add dry ingredients. Simmer 1 1/2 to 2 hours. Remove from heat and let cool for 30 minutes. Great served on a dog with a grilled bun topped with onions! Submitted by: Cummis Chef |
