MOTHERS FRESH APPLE CAKE 
2 1/2 c. finely chopped apple
1 3/4 c. sugar
1 c. raisins
1 c. nuts, chopped
1/2 c. Crisco
3 c. flour
1/2 tsp. salt
1/2 tsp. allspice
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. vanilla
3 eggs, unbeaten
2 tsp. baking soda dissolved in smallest amount of water

Cream sugar and shortening together and add chopped apples to mixture. The apples make the mixture moist while sifting flour. Add raisins and nuts; mix well. Add dry ingredients and mix well. Then add vanilla and eggs. Add the soda as the last item.

Bake in greased and floured large tube pan or bundt pan at 350 degrees for 1 hour. (Can be baked in 2 loaf pans, freezes well.)
