LIGHTER THEN AIR WAFFLES 
3 1/2 c. milk
1 tbsp. salt
2 tbsp. oil
3 tbsp. sugar
4 c. flour
2 tsp. vanilla
2 pkgs. yeast
1/2 c. water, warm
4 eggs, separated

Dissolve yeast and sugar, in warm water. Add milk, salt, flour, vanilla, and add oil last. Cover and let stand for 1/2 hour to overnight. Overnight in the refrigerator works best. Beat egg yolks and add to mixture. Beat egg whites to semi stiff peaks, fold very carefully into mixture.

Spray waffle iron with vegetable spray and ladle in the appropriate amount for your waffle maker.

Serve with Maple syrup in small cups for dipping. Or as an English custom with sharp cheddar cheese sauce ladled over the waffle in place of syrup.
