1 med. head cabbage 10 med. cucumbers 2 red peppers 3 green peppers 4 med. onions BRINE: 5 c. vinegar 2 2/3 c. water 6 c. sugar 3/4 c. flour 1 tbsp. mustard seed 1 tbsp. celery seed 6 tbsp. dry mustard 1 tbsp. turmeric Shred vegetables in food processor and put in large bowl with 3 tablespoons salt. Let stand 2 hours. Drain and squeeze. Blanch corn and cut off cob. Cut enough corn to equal vegetables in other bowl. For brine, put flour and water together and blend smooth. Add rest of ingredients and bring to boil. Add vegetables. Simmer 20 minutes. Jar and seal. Process as recommended. |
