OVEN CARAMEL CORN (Cracker
Jacks)
 
8-9 qt. popped corn
2 c. brown sugar
1 c. butter
1 tsp. salt
1/2 c. white corn syrup
1 tsp. burnt sugar flavoring or vanilla
1/2 tsp. baking soda

Boil all ingredients (except corn and soda) 5 minutes, mixing well and stirring occasionally. Remove from heat and add soda. Stir in quickly. Pour over popped corn, mixing well. Put in 2 large pans and place in 250 degree oven for 1 hour, stirring 2-3 times. When cooled this keeps indefinitely and tastes just like Cracker Jacks (peanuts can be added). Store in tightly closed containers (this is important).
