1 3/4 c. sugar
1 c. oil
3 eggs
1/2 tsp. salt
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
4 c. apples, peeled and sliced
1 c. chopped nuts (optional)
1/2 c. raisins (optional)

In large bowl, beat first 8 ingredients with wooden spoon. Add apples, nuts, and raisins, if desired. Pour into 2 greased bread pans. Bake at 350 degrees for 45 minutes. Sprinkle with confectioners' sugar when cool.

EASY ICING:

1 (8 oz.) pkg. cream cheese
1 1/4 c. milk
1 pkg. instant pudding mix (any flavor)

Chocolate, lemon, pistachio pudding may be used.

Beat cream cheese and milk with mixer. Add pudding mix. This is especially good on angel food cake.
