TURKEY RICE MUFFINS 
1 c. cooked rice
1 c. grated cheddar cheese
1 c. chopped, cooked turkey
1 tbsp. chopped onion
2 beaten eggs
2 tbsp. milk

Combine rice, cheese, turkey and onion; stir in the eggs and milk, spoon into greased muffin cups. Bake at 375 degrees for 25 minutes. Serve with lemon butter sauce.

LEMON BUTTER SAUCE:

1 tbsp. lemon juice
1/2 tsp. parsley flakes
1/4 c. butter, melted

Add lemon juice and parsley flakes to butter and spoon over hot muffins. Note: chicken, ham or tuna may be substituted for turkey.
