APPLE STRUDEL 
PASTRY:

3 c. flour
1 c. regular shortening
1/2 tsp. salt
1 egg yolk
1/2 c. milk

APPLE MIXTURE:

6 c. apples
1 c. sugar (white)
1 tsp. cinnamon
2 tbsp. flour
Oleo, to dot on top

EGG WHITE MIXTURE:

1 egg white, beaten
1 tbsp. water

PASTRY: Cut flour and salt into shortening. Beat egg yolk into milk and stir into flour and shortening mixture. Roll a little less than 1/2 the dough out onto a cookie sheet. Spread apple mixture on top, dot with butter. Roll out the larger half. Place on top of apples and seal. Cut slits on top of dough to vent. Beat egg whites. Add 1 tablespoon water. Beat together. Brush all over top of pastry. Take out of oven, drizzle with icing while hot. Cool and cut into 40 pieces.

ICING:

1 1/2 c. confectioners' sugar
1/8 tsp. salt
1 tsp. vanilla
3 tbsp. milk
