CHINESE CHICKEN SALAD 
3 whole chicken breasts, cooked and cut up
1 head Chinese cabbage or lettuce (shredded)
1 (16 oz.) can roasted unsalted peanuts
5 med. green onions (cut thinly)
3 oz. Chinese rick sticks (Mai Fun)

Cook rice sticks according to package instructions. Mix chicken, cabbage or lettuce, peanuts and onion in a large bowl. Add dressing and toss. Add rice.

DRESSING FOR CHINESE CHICKEN SALAD:

1/4 c. vegetable oil
2 tbsp. rice wine vinegar (Kikkoman)
2 tbsp. sugar
2 tbsp. sesame (dark/oil) Dynasty
2 tsp. soy sauce
1 1/2 tsp. dry mustard
1/2 tsp. grated fresh ginger

Combine all ingredients in jar and shake well.
