BLUEBERRY MUFFINS 
2 c. flour
1/2 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 carton (8 oz.) lowfat vanilla yogurt
1 egg
1/4 c. vegetable oil
2 tbsp. milk
2 tbsp. grated orange peel
1 c. frozen blueberries, rinsed & drained

Preheat oven to 400 degrees. Place 12 baking cups in a muffin pan. In large mixing bowl combine flour, sugar, baking powder and salt. Beat together yogurt, egg, oil, milk and orange peel. Add to flour mixture, stir just until dry ingredients are moistened. Gently stir in blueberries.

Spoon batter into baking cups, filling 3/4 full. Bake 25 minutes or until toothpick inserted in center of muffin comes out clean.
