CHILI CON CARNE | |
2 tbsp. oil 1/2 c. thinly sliced onions 1/4 c. diced green or red pepper 1/2 lb. ground round 1/2 c. boiling water 1 c. canned tomatoes 2 tsp. chili powder 2 tbsp. cold water Dash salt 1 tsp. sugar 1 minced clove garlic 2 c. cooked or canned kidney beans, undrained Cook onions and pepper in hot oil in a large skillet until limp (not brown). Add meat and cook until it loses red color. Add boiling water, tomatoes, chili powder mixed with cold water, salt, sugar and garlic. Cover and simmer 1 hour. Uncover and simmer another 1/2 hour adding small amounts of hot water if mixture gets too thick. Add beans and heat through. Serve with rice, macaroni, corn bread and/or corn chips. Or to your own taste. |
