CHICKEN BREAST IN FOIL 
1 tbsp. whipped butter
1 tbsp. chopped green onions
4 chicken breast halves
4 pieces of foil, each 12x12 inch
8 canned or fresh mushrooms
1/2 c. white wine
Pinch of tarragon
Vegetable salt to taste
Chopped parsley to taste

Saute onions and chicken in melted butter for 1 minute. Grease each piece of foil lightly with vegetable oil and place a chicken breast in the center. Add 2 mushrooms for each breast. Fold edges of foil upward to form individual cooking pan. Add cooking wine to skillet and deglaze; add seasonings. Pour liquid into each foil "pan". Fold edges together tightly. Bake at 350 degrees for 1 hour. Serve 4 at 205 calories per serving.

To deglaze, remove cooked food from pan and keep warm. Add your choice of liquid to hot pan; scrape up crusty bits with a spatula while liquid boils, stirring in additional liquid and seasonings as needed. Pass the rich-tasting sauce as a meat accompaniment.
