BARLEY STEW | |
1 med. onion, chopped 1 clove garlic, minced 1 tbsp. oil 8-12 c. water 1 c. pearl barley 1 c. lentils 1-2 tsp. herbs (basil, thyme, oregano) 1 bay leaf 3 lg. potatoes, diced 2-3 carrots, sliced 1 c. frozen green peas 4 pkgs. George Washington brown broth 1/2 tsp. pepper Saute onion and garlic in oil. Add water, barley, lentils, herbs, bay leaf. Simmer 1 hour until barley is soft. Add potatoes and carrots, cook for 15 minutes. Add peas and brown broth and pepper. Simmer 5 to 10 minutes. |
