CHILIES ROLLENOS 
10 oz. can whole green chilies
1 c. shredded Monterey Jack cheese, or pepper Jack
1 c. shredded Cheddar cheese
2 eggs
1 c. milk
1 (7 oz.) can salsa
Salt and pepper to taste

Slit chilies to open out. Grate cheeses and mix together. Roll up about 3/4 of the cheese into the chilies and place in a greased baking dish. Beat together eggs, milk, salt and pepper and pour over rolled chilies. Sprinkle cheese over the top. Bake at 375 degrees for 35 minutes. Heat salsa and pour over top of casserole and bake 10 minutes more. Serves 6.
