ZUCCHINI RELISH 
10 c. grated zucchini
1 lg. green pepper
1 lg. red pepper
4 c. chopped onion
1 tsp. nutmeg
1 tsp. dry mustard
1 tsp. turmeric
1 tbsp. cornstarch
1 tsp. celery seed
2 1/2 c. white vinegar
5 c. sugar

Grate zucchini, chop red and green pepper. Chop onion and soak overnight with 5 tablespoons of coarse salt. In AM rinse and drain. Set aside.

MAKE PICKLING LIQUID:

1 tsp. nutmeg
1 tsp. dry mustard
1 tsp. turmeric
1 tbsp. cornstarch
1 tsp. celery seed
2 1/2 c. vinegar
5 c. sugar

Cook 15 minutes after reaches boiling point. Pour over zucchini and pepper mixture. Jar and seal.
