CAESAR SALAD DRESSING 
2 tbsp. lemon juice
1-2 tbsp. cider vinegar
1 tbsp. Worcestershire sauce
1/2 tsp. mustard powder (Coleman's)
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. olive oil
1 clove garlic, minced
1 (2 oz.) can flat anchovies (optional)
3 qts. greens, packed well
1/4 c. Parmesan or Romano cheese, grated
1/4 c. blue cheese, crumbled (optional)
1 egg (optional)
2 c. croutons (optional)

In a bowl, beat the juice, vinegar, Worcestershire sauce, mustard, salt, pepper, oil, garlic and raw egg together. Set aside a few hours.

When ready to serve, place greens in salad bowl; add cheeses and garnish with cut anchovies (or leave flat), and croutons.

Romaine or other lettuce types may be used.
