CHICKEN BREAST DIJON 
2-3 tbsp. olive oil
1 1/2 lb. boneless skinless chicken breast halves
1/2 c. Dijon-style mustard
1 c. seasoned bread crumbs

Preheat large skillet and olive oil. Pound chicken until 1 1/2 times original size. Coat liberally with mustard (brush on with pastry brush). Dredge in bread crumbs. Saute on both sides until just firm and starting to brown (about 3 minutes per side). Cover and steam 4-6 minutes or until done. Serves 4. (Fast, easy, delicious light taste).
