OVEN FRIED CHICKEN 
1 whole fryer, cut up or 6-8 chicken pieces
2 c. self-rising flour
Salt, pepper & paprika to taste

In a plastic cooking bag, add your flour and seasonings. Shake to mix. Add your chicken and shake to coat. Take out and put in a skillet of 1 inch of hot oil. Lightly brown on each side. Remove from skillet to a broiler pan with a rack skin-side down. Place in preheated oven at 375 degrees. Bake for 25-30 minutes. Turn and bake for 20-25 minutes longer. (This causes excess oil to drip from chicken.)
