BRANDY YAMS 
6 med. yams, cooked
1/2 c. orange juice
1/2 c. brandy (opt.)
2 tsp. grated orange rind
1 tbsp. cornstarch
1/2 tsp. salt
3 tbsp. melted butter
1/3 c. brown sugar
1 c. granulated sugar

Place yams in an oiled dish. Combine remaining ingredients and cook, stirring constantly until thickened. Pour sauce over the yams and bake at 350 degrees for 30 minutes.

Makes 6 servings.
