POTATO PATTIES 
1 1/2 lb. potatoes (about 6 med.)
2 tbsp. finely chopped onion
2 tbsp. flour
1 tsp. salt
3 tbsp. fat or oil
Pepper to taste

Parboil potatoes in their skins until partly cooked but still hard in center, about 15-20 minutes. Cool under cold running water. Peel potatoes. Shred with a coarse grater. Toss shredded potatoes, onion, flour and salt in large bowl, using 2 forks. Shape into patties (1/2 cup mixture each). Brown patties in hot fat, about 5 minutes on each side. Makes 6 patties.
