SAVORY LASAGNA | |
2 tbsp. olive oil 1 clove 1 med. onion, chopped 1 lb. ground beef 2 tsp. salt 1/4 tsp. pepper 1 tsp. oregano 1 tbsp. basil 1 tbsp. parsley flakes 1 (4 oz.) can mushrooms 2 (6 oz.) can tomato paste 1 1/2 c. hot water 1/2 lb. lasagna noodles cooked and drained 1/2 lb. ricotta or cottage cheese 1/2 lb. Mozzarella cheese or Swiss sliced In hot oil in heavy pan cook garlic and onion until soft. Add beef and seasonings; cook until crumbly. Mix tomato paste and hot water. Simmer for 5 minutes. In 9 x 13 pan put thin layer of sauce, 1/2 the noodles, all the Ricotta, and 1/2 Mozzarella cheese. Repeat with Mozzarella on top. Bake at 350 degrees for 30 minutes or until sauce is bubbling. Let stand out of oven for 10 minutes before cutting into squares. Yield 6 to 8 servings. |
