CRISPY COLESLAW | |
1 sm. head cabbage, shredded 1 med. onion, chopped 1 c. sugar 1/2 c. vegetable oil 1 tsp. celery seeds 1/2 green and 1/2 red pepper, chopped 1/2 c. plus 2 tbsp. vinegar 1 tsp. salt Combine cabbage, peppers, onion, and sugar in a large bowl; stir well. Cover and chill 2 hours. Combine remaining ingredients in a saucepan; bring to a boil, stirring until salt dissolves. Pour over cabbage mixture; toss gently. Cover and chill at least 2 hours before serving. Will keep several days in the refrigerator. Yields 6-8 servings. |
