RUBY'S BERRY COBBLER | |
2 qts. berries (dew berries or blackberries) 2 c. water 2/3 stick butter 1 c. sugar 1/2 tsp. nutmeg Put berries in saucepan with water, butter and sugar. Bring to a boil and turn off heat. There will be a lot of juice. DOUGH FOR BERRIES: 2 c. flour 2 tsp. baking powder 1 tsp. salt 1/2 c. shortening 2/3 c. milk Mix dry ingredients. Cut in shortening and add milk. Knead dough. Roll dough out thin and cut in strips. (Use a little flour to roll dough thin.) Using a cup, dip berries and juice and put in a rectangular baking pan, covering the bottom of the pan. Next drop dough strips in erries. Then add more berries and juice and dough strips alternately, ending with strips on top. Brush top strips of dough with butter and cinnamon sugar. Bake at 400 degrees until top dough strips are done. |
